Freezer Cooking Day - October 2009
I am always up for finding new ways to simplify our lives and feed my family as healthy and nutitiously as possible without breaking my $50 per week grocery budget!
This cool October day we decided to do some baking, cooking and freezing ahead.

On the list:
Pumpkin Chocolate Chip Muffins, Thanks! MoneySavingMom
Cook black beans and pinto beans
Cook brown rice
Cook white rice
Mix sugar cookie dough

We made about 4 dozen Pumpkin Chocolate Chip Muffins of which 3 dozen we froze. They were delicous! We will make again, however this time I am going to make my own pumpkin puree instead of store bought.
The beans, brown rice and white rice we bagged into meal size portions for our family and froze for meals later on. As an attempt to further cut our grocery budget and provide variety in our meals, I am using more beans. For example I made: Shepard's pie & Enchiladas using black and pinto beans. The sugar cookie dough we froze for use later. We were supposed to bake the cookies that afternoon, but opted for the park instead. :)
With much success, we completed our first baking, cooking and freezing ahead day . . . and will do this again soon.

Menu Plan Monday
Sunday - Leftover Beef Stew, strawberries and cottage cheese
Monday - Crockpot Barbequed Chicken and Cornbread.
Tuesday - Mini meatloaves, baked potato, fruit
Wednesday - Salsa Chicken and Black Bean Soup, fruit
Thursday - Sweet and Sour Chicken, vegetables and rice.
Friday - Spinach Calzones and most likely regular calzones for the kids. We will be making our own dough though!
Saturday - Chicken Pot Pie, fruit

Jack Hedge and Josh Lloyd from DesignGroup Architects and Phillip Markwood Architects, respectively, and Roger Beck, a Worthington Schools technology education teacher, will share their expertise and suggest ways you can cut your own energy costs.
Presented in partnership with the Healthy Worthington Coalition as part of their Being Green=Being Healthy series.
Beck and Lloyd recently collaborated with Worthington Kilbourne High School students to build the first LEED (Leadership in Energy & Environmental Design) Platinum home in the Midwest, at 258 N. 21st St. This home uses approximately 72 percent less energy than a non-green home.
For nearly 30 years, Jack Hedge has been applying passive solar, energy efficiency and day lighting theory to institutional and corporate facilities. He was recently elevated to the College of Fellows of the American Institute of Architects for his work in sustainable design.

I can't believe it, but it's time to start thinking about fall meals. I associate things like chili and beef stew with the cool chill of the fall air which has arrived in Ohio this week. Again, anything listed in italics is from our garden!
Sunday - Vegetarian Chili, Turkey hot dogs, green beans and strawberries
Monday - Pesto Chicken Pasta, garlic bread, fruit
Tuesday - Barbeque pulled pork, sweet potato fries, fruit
Wednesday - Layered Fiesta Casserole, fruit
Thursday - Breakfast for Supper! Most likely pancakes, eggs and fruit
Friday - Homemade whole wheat pizza, fruit
Saturday - TBD
